Kale & Berry Smoothie Bowl

Even though it’s a little cloudy, it’s been a good day so far! I got to teach my weekly Vinyasa Flow class this morning and had some new participants come. I typically just have one or two new people since the class is at 8:00 am and we’re in a college town (aka people are still enjoying their sleep), but today I had at least three new people come to class. Even another yoga instructor at Virginia Tech came this morning. I felt like keeping up with the positive vibes of today after I got home from campus so I made a Kale & Berry Smoothie Bowl. Here’s the quick and refreshing recipe.

Ingredients:
  1. 1 cup kale
  2. 1/4 cup frozen blueberries
  3. 1/4 cup frozen raspberries
  4. 1/2 banana
  5. 1/4 cup strawberries (I used fresh but you can also use frozen)
  6. 1/2 cup yogurt
  7. 1/2 cup milk
  8. 1 scoop vanilla protein powder (optional)
  9. Walnuts
  10. Chia seeds
  11. Coconut shavings
  12. Honey

The directions are pretty simple. Combine ingredients 1-7 in a blender, and pour the mix into a bowl. Sprinkle walnuts, chia seeds, and coconut shavings on top. You can also top your acai bowl with slices of the remaining 1/2 of the banana and drizzled honey. Stir and enjoy!
