Goji Berry Coconut Muffins

Lets get baking! I’ll cut right to it: Goji Berry Coconut Muffins. So good. Here’s what you need…

  • 3 cups rolled oats (gluten-free if necessary)
  • 2-3 scoops protein powder
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 1 tsp ground cinnamon
  • 1/2 tsp sea salt
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1/2 cup plain (or honey) greek yogurt
  • 2 T coconut oil, melted
  • 1/4 cup honey (or maple syrup)
  • 1 cup unsweetened almond milk
  • 1/2 cup goji berries
  • Coconut shavings

Now what to do with all those ingredients…

  1. Preheat oven to 350 degrees F.
  2. Combine oats, protein powder, baking powder, goji berries, cinnamon and sea salt in a bowl.
  3. In a separate bowl combine eggs, vanilla extract, applesauce, greek yogurt, coconut oil, honey (or maple syrup) and almond milk.
  4. Add wet ingredients to dry and stir together.
  5. Grease a muffin pan with coconut oil.
  6. Pour batter evenly among the muffin pan.
  7. Sprinkle coconut shavings across muffin tops.
  8. Bake for 15-20 minutes.
  9. Let cool for 15 minutes before removing to cool completely.

These can be stored in an airtight container or frozen. I freeze mine and microwave a couple in the morning to have with my cup of tea. Enjoy!
